Our Story
Once upon a time… We were just a husband and wife absolutely desperate to build a better life for our five kids. We started with one thing, an unparalleled passion for good food and service. We started with $50 worth of groceries, sold some good eats to our family and friends for a time. Before we knew it we found ourselves at a pop up kitchen finally serving the public!
As a lifelong vegetarian, I had it in my mind that I would always include vegetarian options on my menu for those that know the struggle. What we weren’t aware of was the much larger need for VEGAN food! Our first couple of pop ups we listened to so many people asking about vegan and ultimately passing on the vegetarian items. This made us scratch our heads a little and really do some thinking. Was there really a big market for vegan eaters now?
So our next pop up we included a vegan smash burger, along with a couple of other options. We had nooo ideeaaaa what was about to happen next! Someone had posted our vegan selection in the Tulsa Vegan Guide and boy oh boy did it get some attention! Within the first two hours of being open we sold completely out of all vegan items with the rest of our “normal” menu basically untouched. It was a huge eye opening moment for us.
So fast forward to us switching gears a bit and opening up our Cajun food truck, The Bayou. Clearly we had to include some vegan options there as well. And week after week we saw a steady increase in vegan food sales. It was steadily about 20% of our overall sales and that was just WILD! Pretty much every day we are hearing “thank you so much for having vegan options!” The consensus was that there just wasn’t enough vegan options in our area at all. So we just kept at it.
Of course, as curious creatures this is absolutely peaking our interest. So we began to do some research into the benefits of a vegan diet. The more we learned, the more intrigued we became. We talked with several of our fellow vegans every time they came to our window. Now running a business is exhausting and stressful. Running a busy food truck in the heat of spring & summer is physically taxing. So out of desperation we made the switch to a vegan diet and never bothered to look back! It changed our lives!!!
As masters of food we never struggled to feed ourselves delicious vegan food. It wasn’t until a cross country family road trip that the wheels really started to spin (no pun intended). What the heck are we supposed to eat while we are on the road!?! Well thank goodness for Subway being at almost every road stop! It was on this trip that our eyes were opened yet again to the world we find ourselves surrounded by! Meat is everywhere! EVERYWHERE!!! Meat and cheese just dominates the food industry. Being the crazed humans that we are, I suppose it struck a huge cord in our creative, rebellious, entrepreneurial brains. Something must be done!
We. Dug. In. To. Research. And I mean like madmen in dire need to save the world from ultimate doom. Nutritional and health information, animal rights movements, environmental documentaries, other vegan eateries and food trucks across the country and around the world! Talk about mind melting, brain explosion. It was ALOT! And now we are going down this massive rabbit hole and loving every second of it. We could absofreakinglutely never look away now!
Right in that pocket of time, as fate would have it, we witnessed one of the biggest vegan food establishments currently bring their food truck to little ol Tulsa Oklahoma. To our amazement… they had this ridiculously long line all dang day long for, I think, three whole days in a row. You mean to tell us that this market could actually work here??? There’s that many people wanting vegan burgers and junk food?!? Like WOAH!
Now we are paying attention my friends! Like the lights are on and we totally can’t sit still anymore! We are scouring the internet and pestering our food sales rep on the daily for products. And just like another tiny moment that was always meant to be… we found Dr. Praeger. And that was it for us. That was the birth of WTV! We scraped together all of our decades of culinary knowledge. We reached out to our friends at Mother Road Market. And yet again as fate would have it… they had a new pop up kitchen ready and willing to have us! Just at the perfect moment.
We put together our menu. Brought in some long time friends searching for extra work. Loaded everything in. And crossed our fingers and toes. As you all know by now… that pop up was a wild success! What we didn’t expect was to just fall completely in love with serving up vegan burgers and junk food. Every moment felt so beyond right. It was honestly like we have been on our life’s path leading up to this very thing. It was so fun, so rewarding, and we felt so much at peace. This is exactly what we are meant to do in this life.
So ever since then we have been boot strapping this thing, like we have always done in the past. One piece at a time. We take absolutely every opportunity to showcase WTV, all in between of operating our other full time business. We have had so many ideas. Everything we have ever dreamt of doing has found a piece in this vegan puzzle. It’s a lifetime culmination of skills, experiences, ideas, dreams, people, and some big “aha” moments.
We are on a lifelong journey now to grow this into the big, beautiful thing it’s meant to be. If you could only see our massive vision you’d be crazed just like we are. So for now we are a community all working towards the same goal. It’s going to take all of us to get there. One bit at a time.
